Spice Cookies

Arabella’s Christmas Spice Cookies
½ cup molasses
½ cup butter
1/3 cup dark brown sugar
1 tsp. each ginger, cinnamon, cloves
½ tsp. black pepper
1 Tbs. dark rum
1 tsp. baking soda
2 cups unbleached flour
1.    Combine butter, molasses and brown sugar in a small Dutch oven. Heat until butter is melted and sugar is liquid. Do not boil.
2.    Remove from heat. Add everything else except flour. Stir well; Cool to lukewarm.
3.    Add flour and mix until smooth.
4.    Roll, cut out and bake 350 for 5-8 minutes.
